Would this be a good glove for a big 11 year old center fielder

Sure, I think this would be a good option. Generally, a glove around 12 inches would be recommended for 11 and 12 year olds playing the outfield. This glove is 12.5 inches and should give him plenty of room to grow into. And if he's bigger than average, he should be able to utilize this glove now.

How long will the stiffness of the glove last?

This is a high quality glove that will display excellent durability and will retain it's shape and firmness well. It doesn't have a set lifespan and it really depends on how much you use it. It should last well over a couple of seasons.

This glove can be used for baseball or softball. It's not manufactured as a fastpitch glove, meaning it will not be stitched tighter to fit a smaller hand.
